Cook on low for 5-6 hours, then shred. You can choose to scoop the peppers out at this point, or leave them in for an extra kick.

I love giardiniera. This week I've been having Italian sausage sandwiches, just grilled hot Italian sausage and hot giardiniera on a nice soft roll. In my area Aldi has these rolls from Turano that are damn good. That's probably my favorite use for it, though it's also good on Italian beef and on salami sandwiches and such.
