Season the meats. Add chicken, bacon, and drizzle of oil to a bowl and add 2/3 of your rub mixture. Use your hands to massage the spices into the meats. Season the veggies/fruit. Add pepper, onion and pineapple to another bowl and toss with remaining 1/3 of the rub mixture. Assemble skewers.

Preheat oven to 450˚F. Line a sheet pan with foil, spray lightly with nonstick cooking spray and line up the skewers in a single layer. Bake for 10 minutes, turning halfway in between. Brush with the bbq sauce and bake for another 10-15 minutes, until the edges of the bacon are nice and crisp.

Once well-coated, thread the chicken thigh pieces onto skewers (pre-soaked, if they're wooden). Place the kebabs on the preheated grill. Cook for about 5 minutes per side, or until nearly cooked through. Brush the kebabs with the bourbon barbecue sauce and cook for an additional minute on each side. Serve with the remaining BBQ sauce.

Way back, I received a book of Jord Althuizen's, No Worries BBQ. One of my favorite dishes from that book were the Bacon Bourbon Chicken Kebabs. A simple, but delicious BBQ dish (the book is full of those anyway), of which I am now sharing my own version with you. You should definitely try these kebabs on the BBQ, because they are an absolute.

Grill the chicken skewers on a gas or charcoal grill for 5 minutes per side. Baste with additional bbq sauce and cook for 2-3 minutes more per side.

Instructions. Prep meat. Cut chicken/pork into pieces that go well on skewers. In a food processor or high-quality blender, place bacon, brown sugar, and all the spices. Pulse until completely smooth. Rub each piece of meat with bacon paste mix. Might need to "press" it on versus trying to rub it in.

Finely chop the bacon and garlic and add to the bowl. Season with salt and freshly ground black pepper and mix well. In a different bowl, combine the bbq sauce with the other half of the bourbon and set aside. Grab your skewers and dive the chicken mince mixture in 8 even parts. Mold the meat around the skewers and place them on a plate.
