Lower the heat and simmer for 40 minutes. Dump the lentils (and any remaining water) into a large bowl. Add the cooked rice, tomato paste, taco seasoning mix. Stir well. Step 2: The lentil burrito must be cooked in stages or steps to get thick and delicious to make a hearty and tasty filling. Step 4: After the garlic, onions, and jalapenos are cooked, add the cooked lentils (or alternative meat of choice). Step 5: Then add the tomatoes and chili seasoning.

Add 1 cup of rice. Return to boil. Then reduce heat, cover and simmer 20 minutes until rice is done. Bring 4 cups of water to a boil. Add 1 cup lentils. Cook lentils in 4 cups of water for 20-30 minutes until tender. Drain off excess water. Combine cooked rice and lentils in large saucepan. Add tomato paste + 2 tomato paste cans worth of water.

Instructions. Saute the onion in garlic in a pan with olive oil until they are soft. Add the cooked lentils, spices, the season with salt and pepper and cook for a couple of minutes to warm the spices and develop the flavour. Spread the middle of 3 large flour tortillas with vegan mayo.
