Small, squat, and vaguely UFO-shaped, patty pan squash may have left you scratching your head in the produce section. But this squash, available year-round in well-stocked grocery stores but in season during the summer, is a delicious addition to your kitchen. Patty pan squash has a mild flavor, similar to yellow squash or zucchini, and is available in hues of yellow and green.

Heat butter and oil over medium-high heat in a large sauté pan. Add the yellow squash and cook 4-5 minutes or until the squash begins to soften. Add the chiles and cook another 3-4 minutes. Stir in scallions and garlic and cook briefly just to wilt the scallions. Remove from heat and allow to cool slightly.

Place the sliced squash in the bottom of the buttered baking dish, then salt and pepper. Layer the onion, bell pepper, and tomatoes in that order one on top of the other. Instructions. Melt 2 tablespoons of butter in a large pan over medium heat. Preheat the oven to 350 degrees F. Add the squash and onion to the pan and cook for 5-6 minutes or until vegetables are tender. Season with salt and pepper to taste. Remove the squash mixture from the pan and place in a large bowl.

Add drained squash and cook 2 to 3 minutes more, stirring. Remove from heat. Beat egg and add, allowing it to absorb into the mixture. Season with salt and pepper, if needed. Place in casserole dish or baking pan. Cover top with cracker crumbs and dot with remaining butter. Bake for 20 to 25 minutes, until the crumbs brown.

Using a spoon, add half of the cottage cheese on top of the squash. Sprinkle half of the NY sharp cheddar cheese on top. Add the remaining Squash/tomato mixture.

Simmer until all squash is soft. 3. Add the onion, sausage and garlic mixture to the squash mixture, stir well. Add the Italian seasoning, Cajun spice, Worcestershire and stir well. 4. Instructions. Preheat the oven to 425°F. Wash patty pan squash and trim the top and bottom. Cut into 1" bite sized pieces. Toss with olive oil, garlic and salt & pepper to taste.
