For the crème brûlée: Preheat oven to 300 degrees F. Set out six ramekins and a roasting pan that will fit all the ramekins comfortably. Combine cream and 3 tablespoons of the sugar in a medium saucepan. Bring to a boil on the stove. Meanwhile, whisk egg yolks and remaining tablespoon of sugar together in a medium bowl.

Preheat oven to 350. Heat cream to just below boiling. Remove from heat, add chocolate and stir until melted. Then add vanilla extract. Meanwhile, cream together eggs yolks and sugar. Try not to incorporate any air into the mixture.

Preheat oven to 325°. In a small saucepan, heat milk until bubbles form around sides of pan; remove from heat. In a large bowl, whisk eggs, sugar, cocoa and liqueur until blended but not foamy. Slowly whisk in hot milk. Place six 4-oz. broiler-safe ramekins in a baking pan large enough to hold them without touching. Pour egg mixture into ramekins.

Pour the mixture evenly into the ramekins. Place the pan in the oven and pour the hottest tap water so they come halfway up the sides of the ramekins. Heat the heavy cream, espresso powder, and salt together in a medium saucepan over medium heat. As soon as it begins to simmer, remove from heat. Stir in the vanilla extract. Remove about 1/2 cup of warm heavy cream and, in a slow and steady stream, whisk into the egg yolks.

Whisk for 2-3 minutes or till sugar is completely dissolved and mixture turns pale yellow. Set aside. In a pan, put heavy cream on medium heat. Once the cream heats a bit, add chopped chocolate. Place six 6-oz. ramekins or custard cups in a 3-qt. rectangular baking dish. (9x13) Divide chocolate mixture among ramekins.

In a medium bowl, whisk the egg yolks and vanilla extract. Gradually whisk hot cream/chocolate into the eggs/vanilla. Divide the mixture evenly amongst the ramekins. Bake 50-55 minutes, until the custard barely wobbles. Remove from the oven and take the ramekins out of the water.
