Rub all over brisket. If time permits, leave for 30 minutes - 24 hours in the fridge, but I rarely do this. Combine BBQ Sauce ingredients in a slow cooker. Mix then add the brisket - squish it in if needed, like I did (see video). Slow cook in slow cooker for 8 hours (1.5 kg / 3 lb) to 10 hours (2 kg / 4 lb).

Instructions. Line the bottom of the slow cooker with the onions. Then top with brisket and season with salt and pepper. In a bowl, add together all the sauce ingredients and mix well. Pour sauce over brisket and cook on low for 6-8 hours. Towards the end of the cooking, use a spoon to skim off any excess fat from the sauce.

Transfer the brisket to your slow cooker fat side down. Reduce the heat to medium, then place the onions (3 medium sliced) and remaining salt (1 tsp) into the pan and if needed a teaspoon or two of additional oil. Cook until the onions have softened, 6-7 minutes; stirring often.

Caramelize onions, garlic and mushrooms until golden. Place the seared brisket, onion mixture, and bay leaf into the Crock Pot. Add beef stock, red wine, and Worcestershire sauce.
