Preparation. Step 1. Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl. Step 2. Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper.

Add the fresh basil leaves to the pasta water just before the spaghettini is cooked. Reserve ½ cup of the pasta water and drain the pasta. Place the pasta back into the pot and add in the marinara sauce. Add the warm, roasted tomatoes and toss gently. Add reserved pasta water a little at a time to thicken the sauce, if necessary.

Heat oil in a pan and add garlic. Sauté the garlic on a low flame for 2-3 minutes. Add tomatoes and two pinches of salt and cook them for a few minutes till soft.
