1. Make the chocolate ravioli dough. In a large bowl, mix the cocoa powder with the wheat flour until it's completely incorporated. Make a 'well' in the centre of the flour and add the eggs, salt and olive oil. Beat the eggs with a fork and then mix the flour and eggs together until you have the start of a dough.

How to make a classic basil pesto. Combine the basil, garlic, cheese and pine nuts in a food processor. Pulse until ingredients are finely chopped and combined. Pour the olive oil, salt and pepper into the food processor and pulse until the pesto is smooth. Set aside the pesto until the pasta is ready to go.

Add cream, bring to a simmer, and add cognac; cook for a few more minutes to evaporate alcohol and to allow the sauce to thicken slightly. Season with salt and pepper to taste. Set your assembled ravioli aside on the flour-dusted sheet tray. Bring a large pot of water to a boil. Season with salt. For the sauce: Heat a large skillet over medium-low heat.

Bring a large pot of salted water to a boil. While the water is coming to a boil, prepare the ravioli: Lightly flour the work surface again. Roll dough into a thin sheet; cut with a heart-shaped cookie cutter. Brush the edges of each heart with egg wash. Spoon filling into the center of 1/2 of the hearts. Place remaining hearts, egg wash-side.
